Stuffed Acorn Squash Recipe

Today, I’ll show you how to make one of my favorite easy, healthy, and delicious (vegan and gluten-free) fall recipes - roasted acorn squash. With only 9 ingredients - 2 acorn squash, 1 lb mushrooms, 1 onion, 2 garlic cloves, 6 Tbsp olive oil, 1 cup quinoa, 2 cups water, salt & pepper - you can have it prepped, cooked, and ready to eat in less than 1 hour. Feel free to get creative and add any additional vegetables in the stuffing such as red peppers or sundried tomatoes, or use 1 lb of ground meat instead of the mushrooms. Hope you enjoy!
